Hops Margarita Recipe

  • 2 oz Hops infused Jimador Blanco
  • 1.5 oz St. Germain’s liqeur
  • 1 oz N/A Marg Mix
  • Splash Orange Juice
  • Top with Lagunitas IPA
  • Garnish with Grapefruit Wedge

Pumpkin Spice Margarita Recipe

  • 2 oz Apple Cinnamon Pear Infused Sauza Blue
  • 1 oz Rumchata
  • .5 oz Pumpkin Puree
  • .5 oz Pumpkin Liqeur
  • Splash Fresh Squeezed Lemon Juice
  • Top with Upslope Brown Ale
  • Garnish with a Cinnamon Sugar Rim

Triple Cucumber Margarita

  • Infuse Herradura silver with cucumbers
  • Infuse agave nectar with cucumber
  • Use fresh cucumber juice
  • Add a dash of lime juice
  • Salted rim with agave nectar

Marg’s Taco Bistro Donates $21,000 to Invest In Kids

14 Tequila Dinners Provided for Fundraiser

Denver, Colo. — Marg’s Taco Bistro, known for its celebration of “world cuisine,” and bringing the freshest ingredients and most inventive taco culinary creations to Colorado, announces that a donation of 14 tequila dinners was made to the Invest In Kids fundraiser on Monday, May 20. Each dinner was valued at $1500, allowing Marg’s Taco Bistro to raise $21,000 for Invest In Kids, which is a non-profit 501(c)3 organization founded by a group of attorneys and other community leaders who are concerned about the increasing achievement gap between higher and lower income children and the increasing number of serious crimes committed by kids from a low-income background.

We are certified addicts and regulars at the LoDo flagship. If we don’t get a warm, chewy, house-made tortilla fix at least once a week, depression sets in. (Thank God there’s a new Cherry Creek location for doubly easy access.) But it’s not just the tortillas that hooked us: The globally inspired fillings make your typical ground-meat-and-shredded-cheese concoction look simply pedestrian. Our go-to is the Belle, stuffed with meaty portobello, pico de gallo, cilantro, fresh guacamole, and a citrus-basil drizzle we would spoon out of the jar if they let us. The Korean pork version—overflowing with slow-roasted marinated pork, pickled cucumbers, hoisin sauce, and Sriracha—is a close second. Tip: If you’re a queso person, order the beanless bean dip as a zesty side for dipping.

5280 Best Bite: Marg's Taco Bistro's Korean Pork Taco

Every couple of weeks I find myself around the corner at Marg's Taco Bistro in LoDo picking up takeout. I could die happy if a warm Marg's tortilla was the last thing I ever ate. So when I stopped in for my usual—the Belle taco with portobello, Carolina slaw, fresh guacamole, and citrus basil drizzle—and learned that the bustling spot had launched a new menu (and discontinued my go-to option), I had to try the Korean pork version.

The taco came filled with spicy marinated pork, Sriracha, and pickled cucumbers that gave each bite a tangy, fresh finish. I finished three and immediately wanted another. (Truth be told: This taco seriously damaged my “portobollo-is-as-good-as-meat” dining philosophy.)

Sip on this: The jalapeño-kiwi margarita, mixed with freshly made kiwi purée.
